Is this way of life sustainable?!? In my humble opinion, YES! Three years ago today, I stumbled on an amazing video series by Jason Fung, MD on the Diet Doctor website through a random google search about “hormones”!
It’s my three year Fasting and Ketoversary! Dr. Fung grabbed my attention when he said something to the effect of my lifelong battle with obesity and mounting chronic metabolic issues was “not my fault”. Whattttt? I’ve been unsuccessfully trying to lose weight for 30 years!
I then binge-watched videos Fung videos into the wee hours of the night. I totally geeked out on the science of low-carb living. My key take away was learning about my insulin hormone. My new goal in life – keeping my insulin and blood sugar levels as flat-lined as possible. 1.13.2017 was the last day I ate bread, pasta, and potato.
I’ve healed or reversed so many chronic health issues. My favorites being: obesity, insulin resistance, obstructive sleep apnea, and fatty liver disease (NAFLD). I’ve gained amazing energy, freedom, and joy in living! To achieve my healing goals – I stuck with strict keto all day, every day. 20 grams or less per day. 5% carbs, 20 – 25% protein, and 70-75% healthy fats.
I call fasting my MAGIC tool. It was the key to achieving my goals. While losing weight, I followed the 3 x 42 hours weekly fasting schedule. I did not eat M, W, F. I threw in an occasional 3 – 5 day fast to mix it up and get results. All other days, my eating window is 6 hours. Lunch around 11:30am, dinner around 5pm. Now at goal – I am consistent with 18:6 daily, but still throw in a few longer fasts for health reasons.
I don’t snack. I learned how to eat low-carb fully satiating meals. I don’t eat when I’m not hungry. I tracked my daily eating and fasting at times. I didn’t track when life got crazy and tracking was just an added task. The longer you do this, it just becomes natural. I only eat real food. I limit keto friendly sweeteners to special occasions (like making a keto dessert for a gathering).
I spent hours and hours and hours and hours learning the science. I applied the science to my life. And as a result, changed my life! Invest in yourself by spending the time. The reason for my post today is to encourage you in this new year. So many set goals in a new year! In 2017, I found myself so depressed over my health, desperate for healing and I consider it a divine miracle I found Dr. Fung on Diet Doctor.
My biggest reason for sticking with it was my family and specifically I didn’t want my RN daughter to have to care for me in chronic illness. I I was sick and tired of being sick and tired (chronic exhaustion was unbearable)!
I’ve lost 105 lbs and have maintained that loss for 2 years now. I have gained so much freedom! I’m happy to see fasting taking off in the media, and I laugh at all the media harping on keto as being unsustainable. Really? I’m feeling better at 52 than I ever did at 22. Go figure! I still pinch myself and thank God every day for the gift of real food and this fasting lifestyle.
I will never, ever be able to thank Dr. Fung and Dr. Eenfeldt over at Diet Doctor and the rest of their teams enough. Sometimes I just sit here in awe over their vision. I mean really? I give you a standing ovation today!
Something truly humbling happened to me recently, and I’ll consider it a fun way to celebrate this 3 year mark on my journey! My story is being featured in a special interest print magazine from Woman’s World called “Keto Over 50”! It’s in magazine racks now through March 23. Such an honor to be featured with 17 other very inspiring women who took back control of their health (I still love success stories!). If you see it in stores, let me know!

Dear Christine,
My husband had surgery this week, and in preparation of long hours in the hospital, I purchased many magazines beforehand. Although all the stories in Womans World were inspiring, something about your journey just struck me. (perhaps it’s your Irish ethnicity!!) You are just beautiful & your transformation is amazing. I was inspired. I’m 5’3″, 66 years old, presently about 190 lbs, and the thoughts of achieving 145 lbs would be unthinkable, 135 lbs would be short of a miracle, however I’m giving this a good good try. Thank you for your inspiration & God bless you 😊
