I did it again! I took what I had on-hand and created another delicious easy-peasy meal for your Keto enjoyment. If you like chili or fajitas or green chiles – you will enjoy this!
Grab your crockpot and get cooking. This is perfect for a winter day in the Midwest. By the way, my son just scooped this out of the crockpot and said “MOM! This smells so good!” I agree.
Christine’s Keto Crockpot Chicken Fajita Chili
This is what I had on hand:
- 1.5 lbs boneless chicken breasts
- 8 ounces of Philadelphia Cream Cheese
- 12 ounces (1 jar) of Trader Joe’s Salsa Authentica
- 4 ounces of green chilies (read your labels, watch for added ingredients)
- 2 Tbsp lime juice
- 1 tsp chili powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 tsp salt
- 1 tsp pepper
- 1 green pepper sliced thin
- 1 onion sliced thin
Set crockpot to high if you want to cook in 3 – 4 hours. Low if you have all day.
Add the whole breasts to crockpot. No need to cube chicken – you can shred with a fork later.
Add cream cheese, salsa, green chiles, lime juice, and all seasonings to the crockpot.
When chicken is cooked and tender, shred with a fork.
Add green pepper and onion and continue cooking awhile longer until they are tender.
Scoop and add toppings: avocado, shredded cheese, sour cream. Note: you will want to add some healthy fat toppings, as this recipe needs added fats. Makes about 8 servings.
My son just went back for his second serving as I’m typing this!
